taken five potatoes which I have peeled and 250 grams of green peas, fresh
green peas which I have peeled and along with this you have to cut the potatoes
so now you have to cut the potatoes for the pulao also, keep a little big pieces,
do not make very small pieces otherwise when they will be cooked in the pulao,
they will get completely mashed after cutting, put the potatoes in water and
here I have taken 250 grams of Basmati rice.
which is the extra starch gets completely removed and you have to mash your rice with a very soft hand so that the rice does not break here, okay see how much the color of the water has changed, so you have to wash the rice with at least three waters, after this do not soak the rice for at least 25 to 30 minutes, only then the length and width of the rice comes out good.
I have taken two onions and two tomatoes. To make the masala, cut the onions into slices or you can also chop them. You have to cut the onions as thin as you can. See, you have to cut the onions like this. And you have to cut the tomatoes into thick pieces and add them.

like this because till the time the pulao is cooked, the tomatoes do not get
mashed properly. So see, you have to cut the tomatoes like this. So I have cut
the onions into slices and I have cut the tomatoes into thick pieces. Now I
have pressure cooked it here. I will add two to three teaspoons of oil in it.
The oil will get hot.
You have to add some whole spices. You have to
add cloves. You have to add small cardamom, big cardamom, bay leaves and
cinnamon. These spices will give your pulao a biryani-like taste. So I have put
the spices in the oil. Along with this, you also have to add one teaspoon of
ghee. Desi ghee gives a good taste to the pulao. Along with this, you also have
to add one teaspoon of whole cumin seeds. Let the masala heat up a little. You
have to add chopped onions to it.
Now you have to increase the flame of the gas
and cook the onion on high flame till the color of the onion starts becoming
light golden brown. See the color of the onion has become light golden brown.
Reduce the flame of the gas to medium. You have to add one tablespoon of ginger
garlic paste to it. If you do not have ginger garlic paste, then you can also
grind ginger and garlic and add it to the pulao. Mix the ginger garlic paste
well. Cook it with water so that its raw taste goes away.
So you have to keep the flame of the gas
medium at this time. Now see the paste is also cooked. The color of the onion
has become light golden brown, you can reduce the amount of red chili powder
here. You have to mix the masala lightly with the tempering. After this, add
coarsely chopped tomatoes to it and mix the tomatoes quickly so that the masala
does not burn.
Now our masala has become a little dry. After
this you have to add some water to it and mix the masala well with the water.
Now if you keep roasting in dry form then your pressure cooker will start
burning from the sides and you put five to six green chillies in it. You have
to put green chillies whole. You have to cut them and add salt. How much salt
to add? If you are making half a kilo of rice then add one and a half teaspoon
of salt. Mix the salt well. Salt and chillies should be equal in pulao only
then it tastes good. If there is less salt and more chillies then also the
pulao tastes good. Add spices. Add half teaspoon coriander powder. Add half
teaspoon cumin powder. Add half teaspoon garam masala powder.
If you want to add biryani masala then you can
add that too. Along with this we have also added green peas which we had peeled
and kept aside. See mix the green peas well too. So by the time your rice gets
cooked the masala will become soft well. I have added green peas. I have kept
potatoes in water. I have drained their water. Add potatoes too. See you have
to mix potatoes with the masala too. I have increased the flame of the gas. You
have to fry the potatoes and peas for two to three minutes so that the onion
and tomato we have added in it gets mashed well and also gets mixed well.
So see, I have fried the potatoes and peas
well and have also cooked the spices. We will add some finely chopped coriander
to it. I have added some black pepper to it and mix coriander and black pepper
as well. If you want, you can also add some mint to it. Mint gives the pulao a
biryani-like taste. So see, we have cooked the potatoes and peas well and now
you have to add water to it. So I had taken out rice from this bowl.
How much water to addI am putting
it in a big bowl because it is long green basmati rice. Anyway if you make
normal rice, one cup. If you put two cups of water for rice, then you have to
add water to it. So, I have mixed the water well with the potatoes and peas.
Turn the flame on high and cover it with a lid so that it boils quickly.
Covering with a lid will create steam and it will boil quickly. So, see here it
has started to boil. Mix the vegetables properly.
Now when you add rice here, you have to mix it very gently because when we soak rice, it becomes soft. If you stir it vigorously, it starts breaking. Cover the plate from above and you have to increase the flame of the gas from medium to high and until it boils, you have to keep the flame of the gas from medium to high. See, it has become 7:1 and for 3 minutes I kept the flame of the gas from medium to high. It has become 7:1 and see, the rice has started getting a little longer.
Now you have to mix the vegetables with the rice well. Why do we make pulao only? Vegetables are on top and rice remains below. And after 3 minutes, when you mix them well, when your pulao will be ready, all the vegetables will mix well with the rice. You have to apply some moisture on top. I have used a silver file. You can apply kneaded dough and cover it. After this, you have to take a thick pan and keep the block on this pan and keep the flame of the gas on medium. You have to cook it.
