all we will make paratha, for paratha we will apply refined flour, although you
can make it with wheat flour also, but the best layers of it come from refined
flour only, so sometimes it is okay, sometimes when we go to the market, then
also we eat naan or butter naan, garlic naan, we eat it happily, so we make it
at home, now we will put one spoon of salt in it and along with it two to three
spoons of fresh curd, one to one and a half spoons of Desi ghee oil can be
added. I have used oil in it. Now, we will heat the milk a little and add milk, little by little, and prepare a soft dough. Very little milk will be used. If
you want, you can use milk and water by mixing them. No soda was used, nothing
else. Despite that, our parathas were fluffy and very tasty.

There were so many flakes while eating, right? I have
already shown you that. And try this recipe once in my way. It is a very sure
short recipe. And see, just apply about half a glass of milk and apply a little
Desi Ghee oil. Knead this dough well and cover it and keep it for 15-20 minutes
so that we can prepare the vegetable in this time. The dough should swell well
in this amount. Our dough is ready to be made into parathas. Now we will put
oil in the pan. I have added one teaspoon cumin seeds, one star anise, one
small piece of cinnamon, three-four black peppercorns. We will put cloves in it
and two bay leaves. If it is big, you can cut it into two pieces and add it. This
way our recipe will be very good. There was a big onion. I cut its cubes
separately, that is, the outer portion and finely chopped the inner portion. We
will use it in the tempering. Nowadays, our onions are coming in a very big
size. If you find onions too big, that is, you cannot find big ones, then you
can use two medium-sized onions. Remove the cubes of the upper portion and chop
the inner one for tempering. Now we will add some spices.

Roast the onions until they are a little golden brown. So that it has a
smoky flavor, I have added one spoon of coriander powder and half a spoon
of red chili powder. Kashmiri red chili is used because it gives a very nice
color. Now, we will add tomato puree. I made a puree of two tomatoes, and we will
add that to it. We will fry the tomatoes while stirring continuously so that
all the oil that we have added in it gets released. At the same time, I have
added half a spoon of turmeric powder, one spoon of fenugreek, and one spoon of
salt according to taste so that we will not need to add any masala separately
in the vegetable and our masala will be ready. No, we will keep stirring it
continuously and keep stirring and frying. A very good spicy vegetable will be
ready, and that too in just 15 minutes. In total, it took me 30 minutes to make both

Now we will put paneer inside it. I have taken about 350
grams of paneer. We will cut it nicely into big pieces like this. You can cut
it into small pieces also. But here we have to make paneer ki sabzi. So we have

big pieces because in the market you must have seen that if you check the whole
plate, then only four pieces of paneer come out. Just like this. But how easily
we will make such a good sabzi at home. Now today we will make paneer roasted
masala. So for this I have taken one spoon of oil in the pan. We will put one
spoon of butter in it and after that you put 101 cashew nuts in it. After all,
we have to make a royal vegetable. We have to get the taste of a hotel. So you
will have to put all these things. Yes, now we will put onion and capsicum
inside it. There was a big size capsicum and I have already told you about the
onion. The three layers on the outside are I took out the cubes and put them in
the pan after grinding. This way we will keep stirring the onion and capsicum
continuously and fry them.

It will take one or one and a half minutes. We just need to
remove the rawness from it. But remember to keep the flame of the gas very
high. Only then will the smoky flavour of onion come inside. Now see, I have
added half a teaspoon of salt, half a teaspoon of Kashmiri red chilli powder
and half a teaspoon of turmeric powder. Now mix it well. Keep stirring it
continuously and keep the flame of the gas high. See, what will happen while
stirring is that a golden layer will start forming on top of it. Turn it like
this. You must have seen in restaurants also that paneer is fried in this way
and put a spoon of fresh kasuri methi on it. Then it will taste amazing. What
can I tell you? Yes, there was a little bit of it in it. Along with onion, I
had also ground some ginger and garlic. I might have forgotten to tell you
that. So you can try it. Keep this in mind that I have also added 8 cloves of
garlic and 1 inch piece of ginger in it. I will just fry it and see here on the
other side our Tadka is ready. Now beat the fresh homemade cream well and put
it inside it. Take three-four spoons of cream. If you want, add one spoon of
curd also. It tastes very good. Mix it well and keep frying it. Keep frying it
till the oil is released from inside it. We will keep frying it continuously.
See how well the oil has been released. So quickly put the vegetables that we
have fried, onion, capsicum inside it. It is very good. Your vegetable will be
ready like the market. At this stage, we will put some water inside the bowl of
cream and put it inside it.

Cover it and stir it for one to one and a half minutes.

Once we have applied the dough properly, make sure that it is ready. Roll it
once more so that it becomes very soft and prepare small balls of it. With this
much flour in it, total 7 or 8 parathas will be made. If you make it small then
8 and if you make it medium sized then 7 parathas will be made. Cover all the
balls in this way and fold the inside side and make balls like this. Now we
will roll all the balls together and keep the lid on so that they don't dry
from the top. Now we will apply flour little by little and start rolling
one roti. While applying flour little by little, we will roll it to a very big
size. Now the rolling board in the kitchen is not that big.
